Distillation

Boiling a mixture and catching the vapor, so that the parts that boil easiest come off first and condense back to a purer liquid. Separation by temperature — it makes nothing new, it only sorts.

Distillation is written into everyday English as a fossil of the 9th-century labs that perfected it. "Alembic," the still's head, is the Arabic al-anbīq (from Greek ambix, a cup); "alcohol" is al-kuḥl — first the fine cosmetic powder kohl, later borrowed for the pure spirit the still drew off; even "alkali" and "alchemy" carry the same al-. Three of chemistry's most basic words are loanwords from one workshop.

Distillation exploits a plain fact: in a mixture, different liquids boil at different temperatures. Heat the mixture gently and the one that boils easiest leaves as vapor first; cool that vapor and it condenses back to a liquid that is richer in the easy-boiling part. Nothing is created — the still only sorts what is already there — but by sorting it can pull a strong spirit out of weak wine, fresh water out of the sea, or a fragrant oil out of a bushel of flowers.

It gave chemistry its first tool for making something pure. Building on stills devised centuries earlier by Greek-Alexandrian alchemists like Maria the Jewess, alchemists in the Islamic world of the 8th and 9th centuries — Jābir ibn Ḥayyān above all — turned the still into a serious instrument, using it for perfumes, rosewater, medicines, and the concentrated mineral acids that later became industry's universal reagents. Distilling wine to a flammable "water of life" (aqua vitae) followed, and centuries on the same apparatus, scaled to towers, would split crude oil into fuels. Separation is the quiet foundation under most of chemistry.

Its greatest downstream node is petroleum refining, which is simply distillation applied to crude oil — the same 9th-century idea, boiling a mixture apart by temperature, running an entire fuel economy.

  1. 01Half-fill the pot with the mixture; seal the head onto it with a paste (lute) so no vapor escapes at the joint.
  2. 02Cool the head and spout — a damp cloth over the dome, or run the spout through cold water — so vapor condenses there and drips out.
  3. 03Heat gently to a bare boil. The lowest-boiling part (alcohol at ~78 °C; water at 100 °C; light aromatic oils with the steam) vaporizes first.
  4. 04Discard the very first small trickle (the sharp-smelling 'heads') when distilling spirits; then collect the steady clean run into a fresh receiver.
  5. 05Stop collecting when the drip turns weak and watery — the light fraction is spent and you are now just boiling over the heavy remainder.
  6. 06For a purer product, redistill the collected fraction a second time.

For spirits, the early clean run is flammable — it burns with a low blue flame that plain wine will not. For water, distilled seawater drips out tasteless and salt-free while the salt stays behind in the pot. Either way, the receiver holds something measurably purer or stronger than what you put in the boiler.

  • Heat too high — the whole mixture boils over at once and the distillate is as impure as the start; separation depends on a slow, gentle boil.
  • A leaky joint — vapor (and, for spirits, flammable alcohol vapor near a fire) escapes at the seal, losing product and risking a flash fire; lute the joints tight.
  • No cooling on the head — vapor drifts off uncondensed and the receiver stays empty.
  • Collecting the whole run into one vessel — the harsh first 'heads' and weak final 'tails' dilute the good middle; cut them off.
