Passos
- 01Gather the strongest brine you can; if starting from weak seawater, first concentrate it by letting sun and wind evaporate it in shallow ponds.
- 02Filter the brine through cloth or sand to remove grit and debris.
- 03Pour the concentrated brine into shallow clay pans set over a steady fire (or leave it in the sun in hot, dry climates).
- 04Keep it gently simmering, topping up with more brine as the water steams off — never let it boil hard and spit.
- 05As the water leaves, salt crystals form and grow on the bottom and sides.
- 06Rake out the wet crystals and let them drain and dry.
- 07Scrape the pans between batches; in the briquetage method the cheap clay vessels are simply broken to free the salt cake.

Good salt is white to grey, dry, and crumbles freely without clumping into a wet mass. It should dissolve cleanly in water with little grit; a bitter taste means magnesium salts came along and the brine needed better settling.

- ⚠ Boiling too hard → the brine spits and salt spatters out of the pan, wasting fuel and product.
- ⚠ Not concentrated enough → boiling raw seawater from scratch burns enormous fuel for little salt; concentrate first by evaporation.
- ⚠ Bitter end-brine → pushing evaporation all the way to dryness precipitates bitter magnesium and other bittern salts; stop and pour off the last liquor for cleaner salt.
