Most of the oldest ways of storing food are the same trick in disguise: denying microbes water. Salting, sugaring, and drying all lock moisture out of reach, which is why honey, jerky, and salt cod can sit unrefrigerated for years with nothing to make them rot.

The set of techniques that stop or slow the rot of food so it can be stored and eaten long after harvest — chiefly drying, salting, smoking, and fermenting. Nearly all work on the same principle: denying spoilage microbes the water, oxygen, or neutral conditions they need to grow. Fermentation flips the logic, deliberately recruiting friendly microbes to crowd out the dangerous ones.

A harvest or a kill arrives all at once; hunger arrives all year. Preservation is what carries summer's abundance across to winter and spring — the difference between feast-then-famine and steady survival. It also makes food portable and tradeable, provisioning armies, ships, and long journeys far from any field.

步骤

  1. 01Start with the freshest food possible — preservation halts spoilage, it cannot reverse it.
  2. 02Cut meat or fish into thin strips and trim off fat, which goes rancid and blocks drying.
  3. 03For meat and fish, rub thoroughly with salt or soak in strong brine to pull out water and block bacteria.
  4. 04For meat and fish, do not trust dryness alone to kill germs: heat the meat through to a boil-hot core (about 70 °C / 160 °F) at some stage — a quick pre-cook, or drying it close enough to the fire to heat through — before or after drying.
  5. 05Spread the food thin on racks in dry moving air out of direct sun, or hang it in the cool smoke of a low fire.
  6. 06Dry until it is hard and leathery, bending without any soft or moist spots inside.
  7. 07Cool completely, then pack into dry sealed containers away from light, damp, and pests.
  8. 08Check the stores regularly; discard anything soft, slimy, musty, or growing mold.

如何确认它成功了

Properly preserved food is dry to the core, salty or sour rather than "off," and shows no mold, sliminess, or rot smell. Bend-test dried strips: they should crack or flex like leather, never feel cool and moist inside. When in doubt, throw it out — spoiled preserved food can kill.

会出什么错

  • Trapped moisture → any damp pocket, or sealing food while still warm, breeds mold and rot from the inside.
  • Fat left on → fat will not dry and turns rancid, spoiling the whole piece; trim it away.
  • Botulism risk → sealing under-processed low-acid food without enough salt or acid can breed a deadly toxin you cannot smell or taste; stick to proven salt, acid, and drying levels.
  • Dry but not heated → low-temperature drying and cool smoke do not reliably kill E. coli or Salmonella in raw meat or fish; heat it through to about 70 °C / 160 °F at some stage rather than trusting dryness alone.
