- · Cool, dark, dry storage, ideally with a moisture absorber (dry wood ash or charcoal)

- 01While the plants still stand, mark your best — biggest yield, best flavor, disease-free, latest to bolt — and do not eat these.
- 02Let their seed ripen fully on the plant, well past eating stage, until pods or heads are dry and brown.
- 03Harvest the seed and separate it from chaff, pulp, or husk (for wet fruits, ferment or wash the pulp away, then dry).
- 04Dry the seed thoroughly in shade with good airflow — hot direct sun can overheat and kill it. It should shatter, not dent, when struck.
- 05Pack the dried seed in a sealed container, cool and dark, with a moisture absorber.
- 06Keep more seed than you think you need, and label each variety with its year.
- 07Each season replant from this stock and again save only from the best, so the crop improves generation by generation.

Well-dried seed shatters rather than squashes when struck. Before betting a whole field on it, sprout-test a small sample on a damp cloth: good stored seed germinates briskly; poor germination means it was too moist, too old, or heat-damaged.
