Vitamins and nutrition

The discovery that food must supply not only energy, protein, and minerals but tiny amounts of specific compounds — vitamins — whose absence causes distinct deadly diseases, and the science of diet built on that fact.

The trail began with sick chickens in Java. In the late 1880s Christiaan Eijkman noticed his lab hens had developed a beriberi-like paralysis while being fed leftover polished white rice from the military hospital kitchen — and they recovered only because a new cook refused to hand "military rice" to civilian chickens, forcing a switch back to cheap brown rice. Eijkman even misread his own clue, guessing the white rice held a poison rather than lacking a nutrient; his successor Gerrit Grijns got the interpretation right.

Nutrition science is the study of what the body needs from food, and its central discovery is the vitamin: an organic compound the body cannot make (or cannot make enough of) and must get in trace amounts from diet, whose absence produces a specific disease. Scurvy is the lack of vitamin C, beriberi the lack of thiamine (B1), rickets the lack of vitamin D, pellagra the lack of niacin. These are not caused by any germ or poison — they are caused by something *missing*. Food, it turned out, is not just fuel and building blocks; it is also a delivery system for a short list of indispensable trace chemicals.

The idea that a disease could be caused by an absence ran against the whole grain of the era's triumphant germ theory, which had trained physicians to hunt for an invading agent behind every illness. Deficiency diseases had no agent to find. Recognizing them explained and cured some of history's great scourges — the scurvy that killed more sailors than combat, the beriberi that paralyzed rice-eating populations, the rickets that deformed the children of sunless industrial cities — with nothing more than a change of diet. It also reframed food itself, turning "eating enough" into "eating the right things," and made possible the fortification and dietary guidance that quietly prevent these diseases today.

The decisive experiments were about subtraction. Christiaan Eijkman, working in the Dutch East Indies, stumbled onto the beriberi–white rice link through his hospital's chickens, though he first guessed wrongly that polished rice contained a toxin neutralized by its bran; Gerrit Grijns corrected him, arguing the bran supplied a nutrient the polishing removed. In Cambridge, Frederick Gowland Hopkins ran clean feeding trials showing that animals fed a diet of pure protein, fat, carbohydrate, minerals, and water failed to grow, but thrived when given a tiny supplement of whole milk — proof of what he called "accessory food factors." In 1912 the Polish-born biochemist Casimir Funk, isolating the anti-beriberi substance from rice bran, proposed the name *vitamine* — "vital amine" — and argued that beriberi, scurvy, rickets, and pellagra were all a family of deficiency diseases. (The "e" was later dropped when it turned out not all of them are amines.) Hopkins and Eijkman shared the 1929 Nobel Prize for the work.

Vitamins turned diet into medicine and public health. Once the missing factors were named, they could be isolated, synthesized, and added back — vitamin D in milk, iodine in salt, thiamine and niacin in flour — ending deficiency diseases across whole nations at trivial cost. The concept opened modern nutritional biochemistry: the study of how these compounds work as coenzymes and regulators inside cells, and of exactly what a human body needs to grow, heal, and stay well. It is one of the clearest cases in which counting what was *absent* saved more lives than any drug.

Versión mínima viable

Feed animals a diet of pure protein, fat, carbohydrate, and minerals and watch them sicken and fail to grow; add back a trace of whole food — milk, rice bran — and watch them recover. The gap between the two is a vitamin.
