Heating a liquid to a precise, moderate temperature for a set time — hot enough to kill the microbes that spoil it or sicken the drinker, but not so hot that it cooks. It does not sterilize; it culls, and the food must still be kept cold.

Pasteurization was invented to save wine, not milk. In 1864 Louis Pasteur, asked by the French wine trade to explain why so much of it was turning sour, showed the spoilage was the work of living microbes and that a few minutes of gentle heat — around 50 to 60 °C, well short of boiling — killed them without ruining the flavor. He patented the process for wine in 1865. Its now-famous application to milk came decades later, in the early twentieth century.

A liquid is warmed to a specific temperature and held there for a specific time — mild enough not to cook it, hot enough to kill the microbes that would spoil it or sicken whoever drinks it. Two standard schedules do the same job: 63 °C for 30 minutes (the batch, or low-temperature long-time, method) and 72 °C for about 15 seconds (high-temperature short-time, the flash method used industrially). Crucially, it kills most microbes but not all, and no spores — pasteurized food is safer and longer-lasting, not sterile.

Pasteurization is germ theory turned into a kitchen procedure. Once Pasteur had shown that specific living organisms caused spoilage and disease, it followed that you could preserve food and protect people by killing those organisms with a calibrated dose of heat — without the flavor damage of outright boiling or the taste change of salting and drying. Applied to milk, it broke one of the great killers of the industrial city. Raw milk from crowded dairies carried tuberculosis, typhoid, scarlet fever, and diphtheria; it was a leading cause of infant death. Compulsory milk pasteurization in the early twentieth century cut that toll dramatically and made milk safe to sell across a whole city.

The same measured-heat logic preserved beer, wine, and juice at industrial scale, and its principle underlies the whole modern practice of thermal processing: kill the dangerous organisms with the least heat that will do it, then keep the food cold or sealed. It was also a proof of concept for germ theory itself, showing that an invisible cause could be defeated by a precise, repeatable act.

Comment savoir que cela a fonctionné
Historically, dairies confirmed adequate heating with the phosphatase test: the milk enzyme alkaline phosphatase is destroyed at pasteurization temperatures, so if a treated batch tests negative for it, the milk was heated enough. In practice, pasteurized milk or wine keeps far longer before souring than the raw liquid — but note it is not sterile: it still spoils eventually and must stay cold.
