Irrigation
Moving water to the crop instead of waiting for rain — cutting canals from a river or spring to carry water across fields by gravity, and banking the land so it can be flooded and drained on command.

Irrigation is also the oldest known way to ruin farmland. Over-watering the fields of southern Mesopotamia without drainage pulled salt up to the surface as the water evaporated. Cuneiform yield records tracked by Jacobsen and Adams show wheat, the less salt-tolerant grain, falling from half the harvest around 3,500 BC to under a fifth by 2,500 BC — until by about 1,700 BC it could no longer be grown in the south at all, and farmers had switched to barley.

Irrigation is the deliberate delivery of water to crops — decoupling the harvest from the weather. The oldest form is the simplest: cut a channel from a river or spring so that gravity carries water downhill across the fields, bank the land into basins that can be flooded and held, and drain the surplus away. The earliest archaeological canals appear around 6,000 BC at Choga Mami in central Mesopotamia, during the Samarra culture; some later channels ran more than five kilometers from river to field.

Rain-fed farming is hostage to the sky. Irrigation let people farm the hot, dry, but extraordinarily fertile river valleys — the Tigris and Euphrates, the Nile, the Indus, the Yellow River — where crops would otherwise fail for want of water even as the silt-rich soil begged to grow them. That is not a coincidence of geography: the first cities and the first states rose on irrigated floodplains, because only a watered valley could produce the dependable grain surplus that fed a non-farming population of priests, scribes, soldiers, and kings.

Dependable surplus, dense settlement, and the administrative machinery to run it — canals must be dug, cleared, and shared, and the earliest legal codes and bureaucracies are shot through with water rules. Irrigation carried agriculture into deserts and steppes that rain could never farm, and remains the base of much of the world's food supply. Its ancient failure mode, salinization, is still degrading irrigated land today.

Water reaches the far end of every furrow and stands evenly across each basin, then drains within a day or so. The crop greens up uniformly, with no drowned low spots. Watch the soil surface: a white crust or a shine of salt after evaporation means the water is not draining and the land is salting up — the single most important thing to catch early.
