Airtight canning
Sealing food in an airtight container and then heating the whole sealed vessel until the spoilage organisms inside are killed — so nothing can rot and nothing new can get in. Cooked food that keeps for years at room temperature.

✦ Wait, really?
Nicolas Appert made canning work half a century before anyone could explain why it worked. Answering a 12,000-franc prize the French government had standing since 1795, he sealed food in champagne bottles and boiled them; in 1810 the Ministry of the Interior awarded him the 12,000 francs on condition he publish the method as *L'Art de conserver*. Appert had no idea microbes existed — he believed he was excluding air. It would be the 1860s, and Pasteur, before the world learned that heat was killing living organisms, not just keeping oxygen out.
What it is
Canning preserves food by sealing it airtight and then heating the sealed container until the microorganisms inside are killed. Because nothing living remains and nothing new can enter, the food does not rot — it keeps for years without cold, drying, or salt. Nicolas Appert established the method around 1809 using thick glass bottles sealed with cork, wire, and wax, boiled in a water bath; the tin-plated iron can followed within a year in Britain, giving the technique its name.
Why it mattered
Every older form of preservation changes the food to save it — drying, salting, smoking, and fermenting all deny microbes water or make the food too hostile to spoil, and all of them alter taste and texture. Canning was the first method to store food essentially as it was: cooked peas that tasted like peas, meat that tasted like meat, a year later. Its first customer was the military. Appert's prize existed because Napoleon's armies and navies were losing more men to spoiled rations and scurvy than to enemy fire; canned food could carry a fresh-tasting, vitamin-bearing meal across an ocean or a campaign.
What it unlocked
Portable, durable, unrefrigerated food that keeps its character — the ration that provisioned modern armies, navies, expeditions, and eventually the ordinary pantry. Canning decoupled diet from season and locality on an industrial scale, and it was a spur to the science that later explained it: the puzzle of why Appert's boiled bottles kept fed directly into the germ theory of Pasteur. The refrigerated and frozen supply chains came later; the can came first.
Minimum viable version
Pack fresh food into a strong glass jar or bottle leaving some headspace, cork or cap it, boil the sealed vessel in a water bath long enough for the heat to reach the very center, then seal it down tight while it is still hot — safe as written only for high-acid foods.

You need
- · Strong heat-proof glass jars or bottles, or tin-plated cans; matching lids or corks
- · Sealing wax and wire (Appert's method) or modern screw-band lids
- · A deep kettle for a boiling-water bath — or, for low-acid foods, a pressure canner
- · Fresh food at its peak; for borderline foods, added acid (lemon juice, vinegar)
Steps
- 01Pack clean jars with fresh food, leaving a finger of headspace at the top.
- 02Cap or cork loosely so steam and air can escape during heating.
- 03Set the jars in the kettle and bring to a hard, rolling boil.
- 04Hold at the boil long enough for the heat to penetrate to the cold center of the jar — longer for dense or large packs.
- 05Seal the lid or cork down tight while the jar is still hot, then let it cool undisturbed.
- 06Store somewhere cool and dark, and check seals before eating.
How you know it worked
A good seal pulls the lid down concave and firm — it does not flex or pop when pressed. The contents stay clear (for their type), keep for months without bubbling or cloudiness, and smell clean on opening. Any bulging lid, spurting liquid, mold, fizzing, or off smell means it has spoiled: discard it, do not taste it.
What goes wrong
- ⚠ BOTULISM — the deadly one. A boiling-water bath only reaches 100 °C, which does NOT kill *Clostridium botulinum* spores in low-acid foods (meat, beans, corn, most vegetables). Those must be pressure-canned at about 116–121 °C. The toxin is odorless and tasteless and can be fatal — boiling-water canning is safe only for high-acid foods like fruit, pickles, and acidified tomatoes.
- ⚠ Under-processing — too short a boil, or jars packed too densely, leaves a cold core where microbes survive and later spoil the jar.
- ⚠ Bad seal — a chipped rim, warped lid, or reused cracked jar lets air and microbes back in as it cools.
- ⚠ Spoiled but eaten anyway — a bulging lid or spurt on opening is a warning; tasting to check can be lethal.
