The oldest known pottery vessels, from Xianrendong Cave in China, are about 20,000 years old — ice-age hunter-gatherers were firing cooking pots roughly ten thousand years before anyone on Earth farmed.

Boiling detoxifies and softens foods that raw fire cannot — acorns, tough grains, shellfish, old meat, bones rendered into broth — and turns them into meals infants and the toothless old can eat. Sealed jars protect stored food from damp, rot, and rodents, stretching one good season across a bad one. That pottery predates agriculture by some ten millennia shows how much hunter-gatherers already had worth cooking and keeping.

Dig clay, knead in sand or crushed shell so it survives the fire, and raise a vessel by pinching or coiling — no wheel needed. Dry it slowly for days until every trace of water is gone, then fire it in a pit or bonfire for a few hours and let it cool with the embers. The potter's wheel and the enclosed kiln came thousands of years later; the pit-fired pot is the complete, working technology.

Storage jars underwrote food surplus, and surplus underwrote settled life. Fired clay became brick, and brick became architecture. Kilns pushed to higher temperatures led to glazes and porcelain — and kiln-craft plus clay crucibles became the working equipment of metallurgy and, much later, chemistry. Nearly every furnace-based technology descends from people learning to manage fire around clay.

- 01Clean the clay: pick out stones and roots; if it crumbles, soak it in water, pour off the grit, and let the slurry stiffen back to dough.
- 02Knead in roughly one part temper to four parts clay — temper gives escaping steam a way out and stops cracking.
- 03Form the pot: pinch a ball open with your thumbs, or stack rolled coils and smooth them into an even wall no thicker than your finger.
- 04Dry slowly in shade for several days until bone-dry — a ready pot no longer feels cool against your cheek.
- 05Warm the pots beside a fire for an hour, then stack them in a shallow pit, heap fuel over and around them, and burn hot for two to several hours.
- 06Let the pit die down and cool completely — hours, better overnight — before touching anything.

A well-fired pot rings rather than thuds when tapped, holds water without slumping back into mud, and a broken edge shows the same fired color all the way through. A dark, soft core means it needed more heat.
